THE FLOW CHART OF IIDAKO CUT ITEM
1.Raw material: check foreign mater, freshness
2.Washing: a. with chilled water and chlorine 50ppm
b. with chilled water 2 times
3. Keep the Raw material into ice water of 4% salt water and
Chlorine 10ppm more than 1 hour.
4. Cleaning: open cut and remove mouth, eye, ink and gutted
5. Checking: QC checking foreign mater
6. Shaking in ice water of 4% salt solution for 15 minutes
7. Washing by chilled water of 4% salt water.
8. Cutting : cutting into right size up to order ( 1.8
2.3CM) completely
9. Checking: size checking and foreign mater checking
10. Washing: a. with chilled water and chlorine 10ppm
b. Washing again in chilled water 2 times
11. Draining: 10 minutes
12. Panning: NW 2kgs ( after defrosted and drained 10minutes basic) / block
13. Freezing: pour chilled water in block. Time of freezing: 2.5-3 hours
14. Glazing
15. Metal detector
16. Packing: 6bl/ carton box
17. Storing: keeping below -18 degree C |
